Aidiladha & Lapis Marie Cheese

Assalamualaikum

Masih mood raya kah? Tahun ni saya beraya di KL saja. Sendu je kan. First time beraya di rumah sendiri. Sembahyang raya di Masjid Batu Muda dekat ngan Taman Koperasi Polis.

Pagi raya juadah kami hanyalah Spaghetti Meatballs dan Murtabak Raja. Dessert plak saya buat Lapis Marie Cheese. First time try. Inspired by Kak Yani from The Kitchen Guardian. Resipi yang beliau share memang marbelesss. Sedap sangat. She's my favourite baker too!

Saya dah share gambar2 ni kat dalam Instagram. Sapa followers dia tau la. Ade ramai plak tanya resipi untuk Lapis Marie Cheese ni. OKlah. Meh sini nak share. Sharing is caring kan. Sedekah ilmu masak memasak pon dapat pahala. Hehe

Lapis Marie Cheese

Bahan-bahan

1 paket biskut Marie biasa
1 paket biskut Marie coklat
250g cream cheese
250g condensed milk
300ml whipping cream
Grated cheddar cheese (I skipped this part cos lupa beli)

Cara-cara

1. Beat cream cheese sampai dia jadi smooth.
2. Masukkan condensed milk dan keep on beating sampai sebati.
3. Pour whipping cream dan beat until combined.
4. Susun biskut Marie dan layerkan dengan adunan cream cheese, milk & whipped cream.
5. Next layer letak kepingan biskut Marie coklat dan diikuti dengan adunan cream cheese. Then begitulah seterusnya sehingga habis adunan cream cheese tadi.
6. Pastikan lapisan terakhir adalah lapisan adunan cream cheese. Then amik crumble biskut Marie and tabur kat atas. Kalau ade grated cheese, sprinkle over the top.
7. Selesai hias, masukkan dalam peti ais for overnight.
8. Ready to serve! Selamat mencuba!

Senang aje resipi dia. Semua orang bleh cuba. Tak perlu bake pon. Hubster suka sangat. Kebetulan ade kawan beliau datang 3 orang. Saya hidangkan. Memang diorang pon suka makan. Next time boleh buat lagi.

Raya semalam diet kelaut. Harini baru kembali ke pangkal jalan. Kembali mengira kalori.

Oh ya, ni ha juadah saya masak semalam. Boleh la kan? Kami berdua je pon.

Next time bertiga pula! Insya Allah :)

Gigi Manis

Semenjak dua menjak ni, tekak asyik lah nak makan makanan manis2 especially desserts. Last week tetiba rasa nak makan cake. Terlintas nak buat RV yang macam saya buat masa raya haritu. Guna resipi baru by The Kitchen Guardian. Memang sedap sangat. Serious.

Bukak peti ais, semua bahan ada. Tapi....................

M.A.L.A.S

Sebabnya kena operate the mixer. Terus slash RV. Next in line is brownies. Cek bahan semua ada. So apa lagi. Ke dapur lah kita. Senang aje buat brownies ni. Tak perlu pakai mixer. Mix pakai tangan je. Bakar pon dalam 18-20 mins only.

Tung tang tung tang. Siaplah brownies saya. Sedap oh. Tak tipu.

Nama panjang dia Fudge Brownies with Walnut and Chocolate Chunks. Resipi boleh amik from website Joy The Baker. My all time favourite baker. Link dia kat column sebelah kanan ni haa.

Tak penah2 habis saya makan cake but this one is exceptional. Esoknya saya bawak pegi office. Ralat pulak makan sorang2 so share ngan Erin, Kak Ros and Kak Fid. Ingat diorang taknak, sekali licin. Rasa nyesal plak bagi. Uhuk! eh #takbaik

Balik rumah ade lagi 6 ketul. Berebut ngan Hubster. Hubster kesian dia makan satu je. Lagi 5 dia bagi saya makan habis. Gelojoh sangat tau.

Fudge Brownies with Walnut and Chocolate Chunks
Dua minggu lepas saya buat Pavlova untuk hantaran adik Kak Fid, manager saya. Dia request 2-tier pavlova untuk hantaran and 1 tier untuk makan sendiri. Saya letak buah strawberry, raspberry and blueberries. I love the combination of the berries sebab color dia so yums!

Untuk 2-tier harga RM120 and 1 tier RM80. Tapi harga will differ ikut buah2 yang di request. Berries are expensive so memang agak pricy sket. Kalau buah2 biasa normally murah sikit.

Tengok macam sedap je terus saya buat satu untuk saya makan sendiri. Esoknya balik Penang saya buat lagi satu untuk hantaran adik ipar plak.

Banyak sangat makan benda manis sampai gigi pon sakit. Huhu.

Macam mana nak kurus kalau macam ni gaya makannya???

Hitam Manis Memang Sodappp!

This is a baking escapade entry. It has been a while now since I last wrote one. The last entry I think was on Red Velvet Cake. So today I decided to bake an Old School Fudge Brownies with Almonds & Chocolate Chunks. Actually, my sister found the recipe and she had already baked several times. I even tasted those luscious brownies! It is super-duper-uber good! Yeah, I kid you not!

Hubster likes it so much and he kept on begging me to bake one for him. So here I am today, baking one just for him :) By the way, my office is having potluck session yesterday. Instead of bringing the ordinary chocolate kek batik (which was requested by many) I baked this brownies for them. Everybody seemed to enjoy themselves eating every pieces and by the end of the session hanya tinggal bekas semata!

This brownies recipe is just so perfect! The texture of the brownies is so chewy, with a very strong nutty & chocolaty taste. Bila masuk je mulut, it's like having sex in your mouth, where you see starry skies, beautiful fireworks and many more. OK itu hanyalah exaggerate semata :) Saya pakai resipi Joy the Baker, one of my favourite blogger bakers. Kalau nak tau sedap ke tak boleh la mencuba! You won't regret it! Trust me!

Sisterly Baking Series : Red Velvet Cake

Currently,my 2nd sister is obsessed with baking. Mcm demam gitu. hahaha! I used to force her bake before this but she said she needs time to be fully confident. I told her that baking is easy & if u have that passion, things will turn out great! So now dia mcm dah kemaruk. Kalau boleh hari2 dia nak bake something. Last 2 weekends we baked Rich Carrot Cake with cream cheese topping, which I haven't post the recipe yet. Insya Allah will put up an entry on it soon! Aku ni asyik berjanji je kan? Tunaikan nya idok juge lagi..hikhikhik

Ok, btw. Yesterday we had another round of our sisterly baking weekend. We made red velvet cake, yeah!! I once baked the cake but tak jadi on the topping part. So dis time around, should jadi by hook or by crook. Kekeke!! I still use the recipe from Stephanie Jaworski of JoyofBaking and also with the help of my gorgeous friend, Kak Nor as guidance. The cake is so moist & yummy! Mmg sedap, serious x tipu. To those of you who have been requesting for the recipe, here you go :

Ingredients :

Mix 1

2 1/2 cups (250 grams) sifted cake flour
1/2 teaspoon salt
2 tablespoons (15 grams) regular or Dutch-processed cocoa powder
1/2 cup (113 grams) unsalted butter, at room temperature

Mix 2

1 1/2 cups (300 grams) granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract

Mix 3

1 cup (240 ml) buttermilk
2 tablespoons liquid red food coloring

Mix 4

1 teaspoon white distilled vinegar
1 teaspoon baking soda

Cream Cheese Frosting:

500g cream cheese (2 blocks)
(recipe sebenar calls for 227 g or mascarpone cheese but i substituted pkai cream cheese je la. Mascarpone tu mahal amat u olls!!)

1 teaspoon pure vanilla extract
1 cup (115 grams) confectioners' (icing or powdered) sugar, sifted
1 1/2 (360 ml) cups heavy whipping cream
(i used whipped cream biasa)

Method:

Preheat oven to approximately to 175 degrees Celcius.

In a mixing bowl sift together Mix 1. Set aside.

In bowl of your electric mixer, or with a hand mixer, beat Mix 2 until creamy & soft. The eggs must be added one by one. Add the vanilla extract and beat until combined.

Whisk Mix 3. With the mixer on low speed, add in Mix 1 & 2 alternately until fully combined.

Once Mix 1, 2 & 3 are combined, quickly prepare Mix 4 and fold into the batter.

Working quickly, divide the batter evenly between the two prepared pans and smooth the tops with an offset spatula or the back of a spoon. Bake in the preheated oven for approximately 20-25 minutes, or until a toothpick inserted in the center of the cakes comes out clean. Cool the cakes in their pans on a wire rack for 10 minutes.

Once the cakes have completely cooled, wrap in plastic and place the cake layers in the refrigerator for at least an hour (or overnight). (This is done to make filling and frosting the cakes easier.)

Cream Cheese Frosting Method :

In the bowl of your electric mixer, or with a hand mixer, beat the cream cheese and mascarpone cheese until smooth. Add the vanilla and confectioners sugar and beat until smooth. Using the whisk attachment, gradually add the heavy cream and whip until the frosting is thick enough to spread. Add more sugar or cream as needed to get the right consistency.

Assemble :

Now that we have our 2 layers, spread the 1st layer with a layer of frosting. Place another layer of cake on top of the frosting and continue to frost the top and sides of the cake. Once done, boleh ambik some of the cake crumbs and sprinkle je on the cake as garnish.

Senang kan? Selamat mencuba!

P/S: Please excuse the way I frosted the cake..So comotss!! Tak professional la katakan. Hikhikhik!!!

The final product

Grab a slice & you'll be in heaven ;p

Bread Butter Pudding WIth Vanilla Sauce

Hi lovelies...

First of all, I would like to wish Happy Chinese New Year to all my Chinese friends. May this year brings prosper, joy & happiness.

Today's ad hoc & unplanned baking project is Bread Butter Pudding with Vanilla Sauce. Nak dijadikan citer, while browsing through my FB, I saw a friend bake this dessert. Tetiba jer mata trus tgk kat roti Gardenia yang dah berzaman ada atas meja makan. Ting! Kepala keluar lampu. Ala2 keluar idea bernas gitewww..hehehe. So, apa lagi. Pergi dapur amik segala ingredients and tun tang tun tang...siaplah Bread Butter Pudding yang dimaksudkan. Sangat easy peasy schmeezy okay! Even you guys also can try. As a first timer tu rasa macam satu accomplishment because the Bread Butter Pudding kita jadik... Lagi kembang kuncup lobang hidung yang tak berapa mancung ni bile Encik Hubs cakap sedap gilsss... Asyik punggah jer sambil main PS3... *bliss*

So here goes the recipe :

Bread Custard

10 pieces of Gardenia White Bread (nak lagi sedap pakai Butterscotch flavour bread)
4 eggs
1 cup castor sugar
2 cups milk
1 cup whipping cream
1/2 teaspoon cinnamon
4 tablespoons butter (melted)
vanilla extract
Raisins (I used dried apricot instead sbb Raisin xde)

Vanilla Sauce

1 cup whipping cream
1 cup sugar
1 tablespoon all purpose flour
1 egg
Vanilla extract

Method:

1. Preheat oven at 175 degrees Celcius.

2. Cut the bread (in cubes or just carik-carik) together with raisins (or any other fruits) and place in a baking dish.

3. In an electric mixer (or with a hand mixer), beat the eggs and sugar on high speed until thick and lemon colored (about 4-5 minutes). Beat in the vanilla extract and ground cinnamon. Then beat in the melted and cooled butter, milk and whipping cream.

4. Carefully pour (or ladle) the prepared custard mix over the bread cubes until completely covered. Press down the bread cubes so they are covered with the custard.

5. Bake for about 45 minutes.

6. For the vanilla sauce, combine all the ingredients in a saucepan. Whisk on a medium heat until it is thickened.

Voila!!! A fabulous treat for the stomach :) Happy baking!

Till the next post...Toodles!!

Pavlova With Home-Made Strawberry Sauce

Today's entry is basically to share the recipe for the famous PAVLOVA. It was originated from New Zealand and kiranya ni makanan tradisional diorang lah. I once read an article about the debate between Australia and New Zealand to claim as the origin country of this delectable dessert. Sungguh tak paham betul lah, pasal kuih pon boleh bergaduh sakan. Whatever!

Actually the first pavlova I've tasted was at Delicious and for me they made the best pavlova because the meringue is not soft but crunchy. When eat with fresh whipped cream, fresh strawberries & chocolate curls it feels like heave on earth. Alexis also made one of the best pavlova and  preferred it more than Serai. Wahhh..feeling ala2 food reviewer gitewww!khelessss ko mek jeepa!

I've made the first attempt before. Picture as below. Tak sempat nak snap the whole pavlova tu mak dah siap potong & ngap nyah! Ko mampu??? Sudahnya..gambar dalam magkuk je ler yg haderrr..layan kan aje lerrr..hehehehe

The first ever pavlova with fresh cream & strawberries
So yesterday while 'processing' my fridge, I saw the unused whipped cream which I bought earlier. Then I thought why not I give it a second try. Prior to this I've already buat the strawberry sauce siap2 sebab lebihan strawberry haritu dah mcm nak kecut & kesimpulannya tak fresh. Since dah takde fresh fruits, ingat nak try jer pakai srawberry sauce tu. Kita try kaedah cuba jaya ye adik kakak... Voila! tak sangka it turned out great! Kembang kuncup hedung ni bila Encik Husband cakap syyeeedaaappp! Lagi la tinggi motivasi mak nak masuk Masterchef Season 2.Ko hade??hahahaha :)

I took the recipe from Joy Of Baking... Tiru bulat2 resipi dia ok except the sauce cos I twisted the recipe a bit. Memang sedap. Here's the recipe:

Meringue Base

4 large (120 grams) egg whites
1 cup (200 grams) superfine (castor)sugar
1/2 teaspoon pure vanilla extract
1 teaspoon white vinegar
1/2 tablespoon cornstarch (corn flour)

Topping

1 cup (240 ml) heavy whipping cream
1 1/2 tablespoons (20 grams) granulated whitesugar(or to taste)
1/2 teaspoon pure vanilla extract
Fresh fruit - kiwi, strawberries, raspberries, blackberries, passion fruit, peaches, pineapple, or other fruit of your choice

If you opt to use strawberry sauce, you may not want to add sugar to the whipping cream as the sauce & meringue base are already sweet. (Jangan nanti dapat kencing manis tetiba sudahlah)

Strawberry Sauce

1 cup of castor sugar
1 cup water
Fresh strawberries / other fruits (preferrably berries)
Lemon juice

Method :

Preheat oven to 250 degrees F (130 degrees C) and place rack in center of oven. Line a baking sheet with parchment paper and draw a 7 inch (18 cm) circle on the paper. Turn the parchment paper over so the circle is on the reverse side.

In the bowl of your electric mixer, with the whisk attachment, beat the egg whites on medium speed until they hold soft peaks. Start adding the sugar, a tablespoon at a time, and continue to beat, on high speed, until the meringue holds very stiff and shiny peaks. (Test to see if the sugar is fully dissolved by rubbing a little of the meringue between your thumb and index finger. The meringue should feel smooth, not gritty. If it feels gritty the sugar has not fully dissolved so keep beating until it feels smooth between your fingers).

Beat in the vanilla extract. Sprinkle the vinegar and cornstarch over the top of the meringue and, with a rubber spatula, gently fold in. Spread the meringue inside the circle drawn on the parchment paper, smoothing the edges, making sure the edges of the meringue are slightly higher than the center. (You want a slight well in the center of the meringue to place the whipped cream and fruit.)

Bake for 60 to75 minutes or until the outside is dry and is a very pale cream color. Turn the oven off, leave the door slightly ajar, and let the meringue cool completely in the oven. (The outside of the meringue will feel firm to the touch, if gently pressed, but as it cools you will get a little cracking and you will see that the inside is soft and marshmallowy.)

The cooled meringue can be made and stored in a cool dry place, in an airtight container, for a few days.
Just before serving gently place the meringue onto a serving plate. Whip the cream in your electric mixer, with the whisk attachment, until soft peaks form. Sweeten with the sugar and vanilla and then mound the softly whipped cream into the center of the meringue. Arrange the fruit randomly, or in a decorative pattern, on top of the cream. Serve immediately as this dessert does not hold for more than a few hours.

Finally, the end result...Tadaaaaa!!!

Happy baking loveliessss!!! It won't upset u... believe me :)

Toodles!

Menu Lunch on Deepavali

Helllooo lovelies! Hope it's not too late to wish all my Indian friends a happy Deepavali.

Bestnya dok rumah time-time cuti macam ni. Bukan selalu ade masa nak bercuti kan. Nothing much to be done at home except for kemas2 ape yang patut kat umah ni. Al-maklum ler hujng minggu ni omak mentua den nak datang. Kena la bagi umah kemas sket ye dok? hehehe.

We had our lunch at home despite the invitation to join Encik Suami's bestfriends for eating out. I think since it's cuti time, we should just stay at home and enjoy every seconds of it. Betol tak? I think I have my point there. :) kekekeke !!

Maka mulalah akak bergoyang pinggul di dapur ye adik kakak sekalian. Today's menu sangat simple hokay. Dua lauk sudey..tak yah banyak2. Kang nanti membazir sape nak jawab?? Bukan ke membazir itu amalan syaitoooonn?? Sekian.

Lauk2 yang dihidangkan untuk santapan adalah sotong tepung crispy and also chicken sweet sour. Sedap sampai Encik Suami tak berkata2 masa makan. Hehehehe. Bahagianya bila suami cakap masakan saya sedap. Completely contented :).

Sweet Sour Chicken

Sotong Tepung Crispy

Kalo ade sesapa teringin nak try sweet sour chicken tu, meh sini saya ajarkan. Senang je. Kalo ikut cara-cara kat bawah ni gerenti jadi punyaaaa!!

Sweet Sour Chicken

Bahan-bahan

Fillet Ayam
1/2 inci halia
5 ulas bawang putih
Sos cili
Sos tomato
Sos tiram
Kicap manis
Tepung jagung
Lada hitam (ditumbuk hingga jadi serbuk)
Garam
Gula

Cara-cara Penyediaan

By the way, untuk mencantikkan hidangan, boleh la kalo nak letak timun dan buah tomato. Lagi nampak sedap kot. OKlah, selamat mencuba! Till the next post yah..bubbye!

Saturday Baking With Jee : Oreo Cheesecake

Last Friday, while browsing through the net I suddenly stumbled upon a blogger who made Nigella's simple cheesecake and suddenly it just popped in my mind that I wanna bake cheesecake during the weekend and it's definitely Oreo Cheesecake, the cake I wanted to try bake for so long.

I googled for the recipe and macam2 jenis method and recipes ade on the topic. Agak pening jugak nak pilih mana satu. At last, I tried to modify the recipe of my own. What I did was I still used my favourite plain cheesecake recipe (for the cake base I always use Oreo & butter) and I sprinkled Oreo's crumbs onto the batter. Voila! There you go Oreo Cheesecake !! Easy peasy schmeazy! Trust me, it's sinfully sedaaappp!! *Yums*
